Monte Carlos

Ingredients
100g white butter, at room temperature
100g plain flour
25 gms corn flour
½  tsp vanilla essence
70g sugar
1 egg
1/4 tsp bicarb soda
¼ tsp baking powder
40g dessicated coconut

raspberry jam

For the cream filling
40g butter
¼  tsp vanilla essence
1 tsp milk
90g icing sugar

Method
Beat butter, vanilla amd sugar with an electric mixer until just combined. Add egg and beat to combine.
Sift flours with bicarb soda and baking powder and add to butter mixture along with coconut. Mix gentely till well combined.
Roll two teaspoons of mixture into ovals, place on lined oven trays and flatten slightly with the back of a fork. Allow room for spreading.
Bake at 170 ° C till lighly browned at the egdes. Remove and cool on trays for a few minutes to cool completely.
To make the filling, beat butter, vanilla , milk and icing sugar, in a small bowl until fluffy.
Place a small amount of raspberry jam on the flat side of one biscuit and spread some icing on the flat side of a similar -sized biscuit.

Sandwich biscuits together. Repeat with remaining biscuits.

Apple Carrot Cup Cakes

Ingredients
150 gms maida
2 eggs (large)
170 gms sugar
65 gms butter
65 ml milk
1/2 cup grated apple
1/2 cup grated carrot
2 teaspoon baking powder
1 teaspoon essence

Method
Sieve maida, baking powder and essence
Heat milk and butter together till warm and butter has melted.
Beat eggs and sugar together till light. Add warm milk mixture and beat for a minute.
Fold in sieved flour and carrots and apples. Fold till mixture is well mixed. Pour in lined cup cake molds and bake at 180 C for 20 minutes or till done.

PENANUT BUTTER CHOCOLATE CUPCAKES

Ingredients
200 gms flour
180 gms powder sugar     
40 gms peanut butter
40 gms butter
2 tbsp coco powder 
2 tsp baking powder
pinch salt
2 eggs     
125 ml milk
1 tsp Vanilla Essence

Method
Add  eggs, sugar, peanut butter and butter mixing bowl. Using a blender,blend at medium speed until you get a smooth batter, which is light in color.
Add rest of the ingredients and blend till little fluffy.
Spoon batter into baking cups or paper cups till 3/4 full and bake in oven at 180C for 20 to 25 minutes till inserted skewer comes out clean.

Chocolate Pound Cake



Ingredients
1 1/3 cups maida
1/3 cup cocoa powder
1/2 tsp baking powder
1/4 tsp salt
2/3 cup butter, room temperature
1 1/2 cups powdered sugar
3 large eggs, room temperature
1 tsp vanilla essence
1/2 cup milk

Method
Preheat oven to 180° C Grease and line a 9×5-inch baking pan
In a bowl, sift together flour, cocoa powder, baking powder and salt
In another bowl with  beater cream together butter and sugar until light and fluffy. Beat in eggs, one at a time.
Fold in ½ of the flour mixture into the butter mixture, followed by half of the milk. Fold in the remaining flour mixture, followed by the remaining milk. Cut n fold till no streaks of dry ingredients remain and batter is uniform. Pour into prepared cake pan.
Bake for about 30 - 35 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
Allow cake to cool in the pan for 5-10 minutes, then turn it out onto a wire rack to cool completely.

Waffle Recipe


 

Ingredients
1 cups flour
1 tsp baking powder
2 tbsp powdered sugar or to taste
1 tsp. vanilla essence
3 tablespoon oil or melted butter
pinch salt if not using salted butter
1 large egg
3/4 cup milk

Method
Beat sugar, salt, oil and eggs together till light.
Add flour, baking powder, essence and milk. beat to mix well.
Pour on a hot waffle makes, close and cook till light brown.

Fruit Cupcakes


Ingredients
2 eggs
90 grams powdered sugar
130 gms plain flour
90 gms melted butter / margarine/nutralite
½ tsp baking powder
1 tsp vanilla essence / mixed fruit/almond essence
2 tbsp chopped graced cherries
2 tbsp chopped black currants
2 tbsp almonds chopped
1 tbsp milk
Chocolate chips to sprinkle on top

Method
In a bowl break the eggs. Add sugar and butter. Beat with an electric beat till light and pale. About 5 minutes. add butter and beat
Sieve the flour with baking powder.
Using a spatula, fold in the flour and rest of the ingredients into the egg mixture. If batter is too thick add milk 1 tbsp.
Pour the batter into lined cupcake molds till ½ filled. Sprinkle some chocolate chips on top. Bake in a preheated oven at 180° C till done (appox 25 minutes)

Dosa / utapam / idli


Basic Batter

Ingredients
1 cup urad dal                                  2 cups rice
1/2 cup poha                                    2 teaspoon sugar
Salt to taste

Method
Wash and Soak urad dal and rice together in plenty of water.
If you soak in the evening then  next evening wash the soaked  dal and rice very well in fresh water. add poha and keep soaked for 10 minutes.
In a mixer, grind dal, rice and poha mixture using enough water to get semi thick batter. The batter should be little grain.
 If the mixture is thick add little water to get semi thick consistency.
Keep the ground mixture overnight to allow it to ferment.
If not using immediately then keep in the fridge till ready to use.
When ready to use add salt to taste about2 teaspoon and 2 teaspoon sugar. mix well.

To Make dosa: heat non stick pan to just warm.
Take an onion and cut into 2. put 1/4 teaspoon oil on tava and spread with onion.
Pour 2 tablespoonof batter on tava and spread it into a thin layer.
pour 1 teaspoon oil on it. once the underside is done flip it and do the other side, Serve hot with chutney and sambhar.

Important tip: when spreading the dosa or utapam please ensure that tava is mildly hot or the batter will not spread evenly. Once you remove the dosa, whipe the tava with onion This way u spread the oil and also cool the tava before pouring another dosa. Please do not pour dosa hot tava u will not get a good spread.


For Utapam: pour a thick dosa. sprinkle some chopped onions, green coriander and chopped green chillies. once the underside is done flip over and cook till onions turn brown. 

For Idli : Mix 1/2 tsp soda to the batter and pour into idli molds and steam for 20 minutes.

Egg less Bread Crumb Cake

Made egg less cake with bread as key ingredient. It is soft and moist.

Makes 6 small size cupcakes

Ingredients
1 small slice of bread
2 tbsp milk
2 tbsp melted butter ( any one without salt, ghee will also do)
2 tbsp condensed milk
1 tbsp powdered sugar
2 tbsp maida
1 tbsp coco
1/4 tsp vanilla
1/4 tsp baking powder
1/4 tsp soda bi carb or eno

Method
In a bowl crumble the bread, add milk and let  the bread soak for few minutes. Add rest of the ingreadents and  blend with a hand blender for 5 minutes.
pour into lined cup cake molds and bake at 180 C till firm to touch. Appox 20 minutes.

Coconut n Kiwi Milk Shake

Coconut n Kiwi Milk Shake
Ingredients
1 cup coconut milk
1 cup milk
1 tbsp ice cream
Kiwi crush 4 tbsp or to sweetness desired
1/4 tsp coconut essence

Method
Mix coconut milk and milk and chill in freezer till nearly frozen.
Add the milk and rest of the ingredients in a blender with few ice cubes. blend well and serve chilled.


Coconut n  Mango Milk Shake 
Ingredients
1 mango chopped
1/2 cup cocnut milk
1/2 cup milk
1/4 cup pineapple juice
1 tbsp ice cream (vanilla or mango)
honey or sugar to sweetness desired

Method
Mix all the ingredients and chill till nearly frozen. blend in a mixer and serve chilled.

Pan Cakes

Ingredients

3/4 cup milk
2 tablespoons Curds
1 cup Plain flour / whole wheat flour or a mix of both
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla essence
1 egg
2 tablespoons oil / butter, melted. If using Amul butter then do not add salt

Method.
In a bowl sieve togther flour, sugar, baking powder, baking soda, essence and salt.
Whisk the egg add butter, milk and curds. whisk well. 
Add the flour mixture into the wet ingredients and whisk until lumps are gone. The batter should be thick. (like dosa)
Heat a non stick pan, over medium heat, and coat with very little oil. 
Pour 1/4 cupfuls of batter onto the skillet,spread little, (it should be thick like uttapam) and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

    Nutella Truffles

    Another Absolutely easy Dessert
     

    Ingredients
    6 tbsp Nutella
    3 tbsp crushed hide n seek biscuits
    coco to roll truffles in




    Method

    Mix nutella with the crushed biscuits and roll into ball... if it not rolling add some more crushed biscuits. roll these in coco powder and serve.  Simple yet sinfully tasty truffles are ready to serve in a minute.

    Egg less cake using milk powder

    Ingredients
    3/4 cup plain flour
    1/2 cup milk powder
    1/2 cup white butter
    1/2 cup water
    1/2 cup sugar
    1 tsp baking powder
    1/2 tsp. soda bi carb
    2 tsp. vanilla essence

    Method
    1. Sieve plain flour,milk powder, soda and baking powder together
    2. In a bowl beat sugar and butter till light.
    3. Add water and palin flour alternatively whisk. Add essence whisk till incorporated on slow speed.
    4. Put in a lined baking tin and bake at 160 degree in a pre-heated oven for 1/2 hour or till a needle inserted comes out clean.
    Ideal cake to be served with ice cream or eaten hot at tea time.
    Variation add some tutti frutti to it.

    Waffles

    Ingredients

    2 tbsp powdered sugar or to taste
    1 tsp. vanilla essence
    3 tablespoon oil or melted butter
    pinch salt if not using salted butter

    Banana n peanut butter Cookies

    Ingredients
    125gms butter
    100 gms powdered sugar
    170 gms Maida
    1/2 a banana mashed
    2 tbsp peanut butter
    1/2 tsp salt
    1/4 tsp baking powder

    Method
    Cream butter, sugar and peanut butter till light and fluffy.
    Beat in the mashed banana.
    Mix in rest of the ingredients. Add some chocolate chips.
     Shape into cookies and place on a lined and dusted try. make criss cross patters by pressing a fork lightly.

    Bake at 160 C till done.
    Serve warm.

    Waffle

    Ingredients
    1 cups flour
    1 tsp baking powder
    2 tbsp powdered sugar or to taste
    1 tsp. vanilla essence
    3 tablespoon oil or melted butter
    pinch salt if not using salted butter
    1 large egg
    3/4 cup milk

    Pour on a hot waffle maker, close and cook till light brown.

    Marble Cake

    Ingredients
    3 eggs
    1 and 1/2 cup maida ( plain flour)
    100 gms amul butter melted
    1/4 cup oil
    1/4 cup coco and 1/4 cup maida( over and above the previous maida)
    1 cup sugar
    1/4 cup  milk
    1 tsp baking powder
    2 tsp vanilla essence


    Method
    Beat the eggs and sugar till light and fluffy. Add oil and melted butter and beat for sugar has dissolved and the mixture is light and creamy in color.
    Add the flour and bakingpowder and beat so that it just mixes.
    Divide the mixture into two parts. To one part add coco and mix and to other add maida and mix.
    Grease and dust an 8" pan. Pour the white mixture first and then the brown mixture. with a knife make twirls . Bake in a preheated oven at 180 C for 30 minutes or till done.
    Serve warm.



    Tri colour puri

    Ingredients
    3 cups wheat flour
    1/2 cup besan / gram flour
    1 cup boiled and pureed palak
    1 beat root boiled and pured
    1/2 tsp. turmeric
    salt to taste
    1/4 tsp. ajwain [caraway seeds]
    1/4 tsp. garam masala
    1/2 tsp. coriander powder

    Method
    Yellow color
    Take 1/2 cup besan and 1/2 cup wheat flour-- add turmeric, salt, little of other masalas and knead into a soft dough

    Green color
    to 1 cup wheat flour add pureed palak little of masalas and knead into a soft dough. if dough to slack take more flour

    Red color
    To 1 cup flour add pureed beat root add little of masalas and salt. knead into a soft dough if required take more flour.

    Now make long 1 inch thick rolls of each of color. Make a braid then just lightly roll them so the the dough catches each other. Cut into smaller portions.
    Roll into puris and deep fry. Enjoy with curds and achar.

    Vanilla Chocolate Chip Cupcakes

    Ingredients
    2 cups maida
    100 gms margarine or butter melted ( i used amul nutralite)
    1/4 cup oil
    1 cup grain sugar
    1 tsp baking powder
    3 eggs
    2 tsp vanilla essence
    1/4 cup milk
    few chocolate chips to sprinkle

    Method
    Sift maida and baking powder together
    In a clean bowl beat eggs and sugar together till frothy -about 3 minutes
    Add melted margrine and oil and beat further till light in color - about 5 minutes
    add the sifted flour, vanilla essence and milk. Beat till flour is mixed in - about 1 minute.
    Pour into lined muffin tin tray and sprinkle with chocolate chips. Bake at 150 C till lightly brown in color- about 20 to 25 minutes
    ( the time is never accurate as each oven differs so best way to check is to insert a needle and see if it comes out clean or they feel firm to touch and have turned light brown)


    Makes about 24 cupcakes which believe me do not last

    Chicken / Paneer Stir fry

    Ingredients
    500 gms chicken cubed / paneer
    1 egg
    3 tbsp each maida and corn flour
    3 spring onions sliced along with greens
    Few broccoli florets
    3 leaves of Bok Choy: bottom part cubed and leaves sliced
    6 baby corn sliced
    1 tbsp garlic chopped
    3 tbsp chings schezwan sauce
    1 tbsp tomato sauce
    1 tbsp soya sauce
    salt to taste
    oil to deep fry.

    Method
    Make a batter of madia and corn flour by adding egg and salt to it and enough water to get a coating consistency. dip chicken in the batter and deep fry over medium heat till golden brown. If using paneer dip paneer and fry. ( if not using egg- use only water)
    In a wok heat 3 tbsp oil add garlic and corn - saute till corn turns slightly brown.
    Add broccoli and bottom part of bok choy- saute
    Add greens of onions and bok choy leaves- saute
    Add fried chicken / paneer and all the sauces and salt. toss to mix well.
