Italian Mint Grilled Sandwich


Ingredients
10 bread slices                                                       1 red capsicum chopped finely
1 onion chopped finely                                            3 tbsp leak chopped
3 tbsp finely chopped broccoli                                1/2 cup chopped lettuce
1 potato boiled and chopped finely                          salt and red chili flakes to taste
1/2 tsp mixed herbs                                                 1 tbsp oats flour
milk as required                                                       Mint chutney as required


Method
Heat 1 tablespoon olive oil.. Add onions, leak, broccoli and  capsicum saute for 2 minutes.
Add potatoes, mixed herbs, salt and red chili falkes. Toss for few seconds.
Add oats flour. cook for few seconds and add  enough milk to get thick consistency.
Remove form fire and add chopped lettuce.
Apply butter to one side of bread. spread some mint chutney. Spoon enough filling and sprinkle cheese as required. Close with other bread slice, with the buttered side down. 
Grill the sandwich and serve hot.

Shrewsbury, chocolate and marbled biscuits. At the risk of sounding pompous, the biscuits were simply delicious. Must be the fresh homemade butter. The doll sized porcelain cup and saucer is part of a tea set I found on a street hawker's haathgaadi/ cart. And its a prized addition to my kitchen showpiece collection.
of course...Ladies, I'd like to introduce Rajul as my biscuit mentor! Rajul, some of my dear pals who obligingly say such nice things about me! ;)

Sorry that I am writing this after so long but its better late than never!

I would like to thank you so much to introduce me to the world of cooking.
Before joining your classes, cooking was something I did only to survive. After seeing you cook for your class with the love and passion... I was amazed!

I came to your classes just to learn cakes and cookies...but after doing that for one saturday I could not stop myself from coming back every saturday post that.
I think you gave me new passion...and I can't thank you enough! My family is not complaining for the new found interest either...so all's good I guess...ha ha ha!

I am attaching images of Chocolate muffins and Coconut Cookies with this mail.

So far Strawberry cheese cake was the best but none of us could wait to eat before taking pictures. Next time!
