Apple Carrot Cup Cakes

Ingredients
150 gms maida
2 eggs (large)
170 gms sugar
65 gms butter
65 ml milk
1/2 cup grated apple
1/2 cup grated carrot
2 teaspoon baking powder
1 teaspoon essence

Method
Sieve maida, baking powder and essence
Heat milk and butter together till warm and butter has melted.
Beat eggs and sugar together till light. Add warm milk mixture and beat for a minute.
Fold in sieved flour and carrots and apples. Fold till mixture is well mixed. Pour in lined cup cake molds and bake at 180 C for 20 minutes or till done.

Pav Bhaji

Ingredients
4 potatoes boiled  and mashed                         
 5 medium tomatoes grated
2 medium onion Grated                             
3 tsp Pav bhaji masala (everest)         
 salt and red chili powder to taste                            
1 tsp dhania powder
1/2 tsp jeera                                                              
Ginger and garlic as required


To be boiled together
250 gms Bhopla ( red pumkin) diced                              100 gms Lauki ( bottle groud) diced
1/2 cup green peas                                                            1 carrot diced
1 and  1/2  capsicum Medium diced

Method
Boil all the ingredients mentioned in "boil together" till the peas turn soft Keep aside to cool . Once cool take the vegetables and blend coarsely in a chopper or mixer. Important : Do not discard the water  in which the vegetables are boiled as all the flavor are in the water.
Heat 5 tablespoon oil in a kadai . when hot add jeera and let it crackle.
Add grated onions and fry till brown.
Add pav bhaji masala, red chili powder, dhania powder and salt and mix. Add grated tomatoes. Cook till tomatoes are done.They turn soft.
Add the mashed mixed vegetables and mix well. cook for 2 to minutes.
Add the mashed potatoes and mix well pressing a bit so that any lumps in potatoes become smooth.
Add the left over water from the boiled vegetables and mix. Cook till desired consistency is reached.
Top with 2 tablespoon ghee and 1 tbsp butter or just 3 tbsp of either --- Sounds too much butter or ghee but believe me this is what gives the flavour--- not a diet food :)
At the time of serving take little butter add garlic as liked let it turn pink add ginger as liked saute. add red chili powder to taste ( only if required) Add to prepared pav bhaji. Garnish with chopped coriander and serve hot with pav which have been buttered and toasted on hot girdle.  

Points to keep in mind: The red pumkin should be a ripe one. dark orange in colour.
