Roasted Corn and Bell pepper salad

Ingredients:
2 cups corn boiled
1 diced and roasted red capsicum 

1 cup diced lettuce 
1/4 cup bread crutons
5-6 basil leaves
Red chili falkes to taste


For the dressing:
1/2 cup mayo
1/4 cup lime juice or to taste
1/4 cup olive oil
1 clove crushed garlic
1/2 tsp dried Italian herbs
1/2 tsp sugar
1/2 tsp freshly ground black pepper
1/4 tsp salt



Method: whisk all the ingredients of dressing together till well blended and chill/
Toss corn, capsicum and lettuce together and chill.At the time of serving to toss the slad with required dressing. Adjust the slat to taste.
serve chilled.

Dosa / utapam / idli

Basic Batter

Ingredients
1 cup urad dal                                  2 cups rice
1/2 cup poha                                    2 teaspoon sugar
Salt to taste

Method
Wash and Soak urad dal and rice together in plenty of water.
If you soak in the evening then  next evening wash the soaked  dal and rice very well in fresh water. add poha and keep soaked for 10 minutes.
In a mixer, grind dal, rice and poha mixture. The batter should she very little grainy- using water as required.
If the mixture is thick add little water to get semi thick consistency.
Keep the ground mixture overnight.
If not using immediately then keep in the fridge till ready to use.
When ready to use add salt to taste appox 2 teaspoon and 2 teaspoon sugar. mix well.

To Make dosa: heat non stick pan to just warm.
Take an onion and cut into 2. put 1/4 teaspoon oil on tava and spread with onion.
Pour 2 tablespoonof batter on tava and spread it into a thin layer.
pour 1 teaspoon oil on it. once the underside is done flip it and do the other side, Serve hot with chutney and sambhar.

Dosa
Important tip: when spreading the dosa or utapam please ensure that tava is midly hot or the batter witll not spread evenly. Once you remove the dosa, whipe the tava with onion This way u spread the oil and also cool the tava before pouring another dosa. Please do not pour dosa hot tava u will not get a good spread.


For Utapam: pour a thick dosa. sprinkle some chopped onions, green coriander and chopped green chillies. once the underside is done flip over and cook till onions turn brown. 

For Idli pour into idli moulds and steam for 20 minutes.

Punjabi Pokara Kadi

Ingredients
For the Kadi
1/2 cup curds                                                          3 tablespoon Besan ( gram flour)
1 1/2 cups water                                                      1/4 teaspoon haldi
1 small onion chopped finely                                    1/4 teaspoon jeera
1 teaspoon kastori methi / or few methi dana
4 whole dry red chilies                                             1 teaspoon whole dhania seeds                                   
5-6 curry leaves                                                       salt to taste                 

For the pokaras
1 onion finely chopped                                        1 potato chopped like onion
1/4 cup besan                                                      salt to taste

Method
For the pokaras
mix onions, potatoes, salt and besan. Using enough water make into thick paste. Drop spoon fulls into hot oil. Deep fry to golden brown.

For kadi
Whisk curds. Add water and whisk. Add besan and haldi, whisk well. keep aside
Heat 2 tablespoon oil- add jeera, sute: add garlic, when it turns light brown add onion, sute till onions turn light pink.
Add curry leaves, dry red chiles, methi and dhania seeds: saute for a second.
Add the besan and curds mixture. Whisk well and string continuously,  bring to a boil. cook till thick.
Add the pokaras. Serve hot with rice.

Peanut Butter Chocolate Shake

Ingredients
1/2 cup milk
1/2 banana  chopped
8 tablespoon chocolate sauce (fun food brand)
2 cups vanilla ice cream
1tablespoon smooth peanut butter (optional--- only use if the flavor is liked)

Method
Add all the ingredients in a mixer and blend well. Pour into glasses with crushed ice and serve chilled with twirls of whipped cream

Mango Berry Cooler

Ingredients
1 Ripe mango cut in to large pieces
1 mango cut in to small pieces
1 tsp lemon juice
few mint leaves for decoration
8 scoops vanilla ice cream
1/2 cup strawberry crush
crushed ice as required

Method
In a mixer add the large mango pieces and ice cream. Churn till smooth. add little milk if reqiured.
add lemon juice and strawberry crush and mix for a second.
In tall glasses add crushed ice till half full, Pour the above in to the glasses. Top with cut mango pieces and decorate with mint sprigs.

Variations Add orange juice instead of strawberry crush
Add 200 ml coconut milk instead of strawberry crush to get mango colada.

Set Dosa

Italian Mint Grilled Sandwich


Ingredients
10 bread slices                                                       1 red capsicum chopped finely
1 onion chopped finely                                            3 tbsp leak chopped
3 tbsp finely chopped broccoli                                1/2 cup chopped lettuce
1 potato boiled and chopped finely                          salt and red chili flakes to taste
1/2 tsp mixed herbs                                                 1 tbsp oats flour
milk as required                                                       Mint chutney as required


Method
Heat 1 tablespoon olive oil.. Add onions, leak, broccoli and  capsicum saute for 2 minutes.
Add potatoes, mixed herbs, salt and red chili falkes. Toss for few seconds.
Add oats flour. cook for few seconds and add  enough milk to get thick consistency.
Remove form fire and add chopped lettuce.
Apply butter to one side of bread. spread some mint chutney. Spoon enough filling and sprinkle cheese as required. Close with other bread slice, with the buttered side down. 
Grill the sandwich and serve hot.

Shrewsbury, chocolate and marbled biscuits. At the risk of sounding pompous, the biscuits were simply delicious. Must be the fresh homemade butter. The doll sized porcelain cup and saucer is part of a tea set I found on a street hawker's haathgaadi/ cart. And its a prized addition to my kitchen showpiece collection.

I would like to thank you so much to introduce me to the world of cooking.
Before joining your classes, cooking was something I did only to survive. After seeing you cook for your class with the love and passion... I was amazed!

I came to your classes just to learn cakes and cookies...but after doing that for one saturday I could not stop myself from coming back every saturday post that.
I think you gave me new passion...and I can't thank you enough! My family is not complaining for the new found interest either...so all's good I guess...ha ha ha!

So far Strawberry cheese cake was the best but none of us could wait to eat before taking pictures. Next time!

Hi this is Manisha, i had attended ur cakes on cookies workshop this sat..... I made shrewsbury biscuits today n they have turned out simply amazing, very crunchy, delicious taste, they just melt in mouth... I had tried to make them many times before but i always failed but this time i blindly followed ur receipe n got the desired results, also the way u taught was very easy to understand. Sending you some pictures of the cake that I baked for my son's 8th
b'day. Though I knew baking my cakes used to turn out very crumbly and
the icing could not be done properly. Your cake class really helped me
